HACCP (Hazard Analysis Critical Control Point) is a self-control system that every operator in the field of the production of food- alimentary must put in existence to the aim to estimate the dangers and risks and to establish control measures in order to prevent hygienic and sanitary problems. The system of hygienic self-control allows to prevent eventual problems on all the steps of the production, without to concentrate control activity on the final product. The HACCP has been introduced in Europe in 1993 with the directive 43/93/CEE (in Italy with the decree legislative 26 May 1997, n. 155), that obliges the application of HACCP protocol for all the operators working in the alimentary productive chain. This norm has been replaced in 2006 by regulations 852/2004. The steam and vacuum cleaners Mod.3500 - 3000/D are HACCP homologated.
